Chorizo, Mushroom, Tomato and Pesto Pizza
I was about to make a breakfast pizza for Saturday brunch, but realizing it was 1pm I switched to chorizo.  It was a good call.
Ingredients:
1 portion of pizza dough
4 tbsp chili pesto
100g sliced shitake mushrooms
1 punnet of cherry or grape tomatoes, sliced in half
2 chorizo sausages, sliced
Salt and pepper
2 tbsp olive oil
Preheat the oven to 250C / 425F, with an oiled pizza stone in there (or baking tray).  Flour a surface and spread out the pizza dough until it’s roughly a 14 inch circle.  Pull out the pizza stone and carefully place the dough on the stone.  Spread the pesto on top, then add mushrooms, tomatoes, and chorizo.  Season with salt and pepper, and drizzle 2 tablespoons of olive oil on top.  Bake on high heat for about 20 minutes until golden on top.
